    About this recipe: This is a delicious vegetarian lasagne, which is simple to make. Lasagne sheets are layered with mozzarella and a sauteed carrot, pepper and chard mixture. Enjoy with garlic bread, if desired.

    Ingredients
    Serves: 6 - 8

    • extra-virgin olive oil, as needed
    • 1 onion, chopped
    • 2 carrots, grated
    • 1 red pepper, thinly sliced
    • 8-10 leaves chard, stems removed and discarded
    • 500g grated mozarella cheese
    • 500g lasagne sheets
    • salt and pepper to taste
    • water, as needed

    Method

    1. Preheat oven to 180 C / Gas 4.
    2. To a warm pan, add a few tablespoons of olive oil. Add the onion and stir until golden in colour. Add carrots and pepper. Stir until they soften.
    3. Stir in chard leaves, a bit of water, salt and peper and let simmer until the chard has softened.
    4. Butter a lasagne dish and pour in a glass of water into the bottom of the dish. (This will make the lasagne softer).
    5. Lay a single layer of lasagne sheets on the bottom of the dish. Top with chard mixture, grated mozzarella and lasagne sheets. Repeat until you have run out of lasagne sheets and chard; finish with mozzarella.
    6. Bake lasagne in preheated oven for approximately 50 minutes.

    Ingredients

    If you can't get your hands on chard, you can use spinach.
