About this recipe:Crisp iceberg lettuce leaves are filled with a mixture of olives, cucumber, tomatoes and falafel. They are then drizzled with a spicy mayonnaise sauce. Enjoy as an appetiser or starter.
For the Sauce
3 tablespoons mayonnaise
1 tablespoon tzatziki (optional)
2 teaspoons mustard
1 teaspoon Tabasco sauce
For the Filling
2-3 ready-made falafel, crumbled
125g cucumber, finely chopped
2 ripe tomatoes, deseeded, patted dry and diced
5-6 olives, pitted and chopped
12-15 whole, medium-sized iceberg lettuce leaves, rinsed and patted dry

To make the sauce, mix all the sauce ingredients together in a bowl. Set aside.
Arrange lettuce leaves like cups on some plates. Drop some olives in the bottom of each lettuce cup.
Add some tomato, cucumber and crumbled falafel into each lettuce cup.
Spoon some spicy sauce over each salad pocket. Add a little grated cheese. Enjoy.
