    About this recipe: This incredibly easy recipe creates a delicious meatloaf. It's perfect when served alongside potatoes and vegetables. Pan-fry sliced leftovers to make wonderful sandwiches.

    Ingredients
    Serves: 4 

    • For the Meatloaf
    • 750g minced beef
    • 1 (40g) packet French onion soup mix
    • 2 eggs
    • 1 tablespoon plain flour
    • 1 teaspoon soy sauce
    • For the Sauce
    • 1 tablespoon sugar
    • 1 1/2 teaspoon mustard powder
    • 1 1/2 teaspoon curry powder
    • 1 teaspoon oil
    • 3 tablespoons plum jam

    Method
    Prep:10min  ›  Cook:45min  ›  Ready in:55min 

    1. Preheat oven to 200 C / Gas 6. Mix all meatloaf ingredients together well.
    2. Transfer to a greased baking tray and mould into a loaf. Mix sauce ingredients together and spoon sauce over loaf.
    3. Cook in preheated oven for 20 minutes, then reduce temperature to 180 C / Gas 4. Cook for a further 25 minutes.

    This really is such a good recipe for meatloaf and so straight forward. I halved the ingredients as only cooking for two and there was still some left over. Will definitely make this again - 08 Dec 2010

    Used different ingredients. I didn't have any plum jam, mustard or curry powder so I made a sauce out of soy sauce, tomato ketchup, BBQ sauce and some sugar. Worked well! - 08 Dec 2010
