Cheesy Bacon and Potato Bake

    A simple, yet delicious side dish that will go well with almost anything. Potatoes are layered with shallots, bacon and cheese, then baked to perfection.

    Serves: 4 

    • 3-4 large potatoes, peeled and thinly sliced
    • plain flour, for sprinkling
    • 2 small shallots, sliced
    • 3 rashers bacon or sliced ham, chopped
    • pepper to taste
    • 125g mature Cheddar cheese, grated
    • 125ml milk

    1. Preheat oven to 180 C / Gas 4. Grease a baking dish.
    2. Arrange a layer of potato in the baking dish. Sprinkle with flour, pepper, bacon, shallots and cheese. Repeat until all ingredients are used up, finishing on potatoes, cheese and pepper.
    3. Pour milk over the potatoes and bake in preheated oven for 1 1/2 hours.

    Very easy and tasty. I used onion instead of shallot and cream instead of milk, since that's what I had handy. It would be a satisfying meal on its own, not just as a side dish.  -  27 Dec 2012

    Very tasty! I have also tried it with tinned tomatoes instead of milk and spring onions instead of shallots which also worked well  -  03 Nov 2015
