Preheat oven to 220 C / Gas 7. Line baking tray with baking parchment.
Cream the butter with sugar, until light and fluffy. Add flour until well combined. Roll to the desired thickness and cut into circles or squares. Prick the top of the shortbread with a fork, if desired.
Place on prepared tray and bake in preheated oven for 15-20 minutes or until slightly golden. Remove from oven and cool on wire rack.
These shortbread biscuits were yummy. The things i'd change would be use 200g sugar, 225g flour and bake for 20 minutes. My nan and granddad came round when i was making up the mixture (my nan was a baker) and she said use those measurements and they turned out YUMMY. They were gone within 10 minutes, and my baby sister approved (she's hard to impress). Definitely going to be added to my favourites! - 23 Feb 2013
