    About this recipe: This beetroot salad is easy and I like it because it uses the greens as well as the root. If your beets are large, you may want to increase the amount of dressing.

    Ingredients
    Serves: 6 

    • 4 fresh beetroots with leaves, scrubbed
    • 4 tablespoons apple cider vinegar
    • 4 tablespoons caster sugar
    • salt and pepper (optional)

    Method

    1. Cut the greens off of the beets and rinse off under cold water. Shred the beetroot with a cheese grater.
    2. Dry the greens and slice them crosswise into 5mm wide strips.
    3. Combine the greens and grated beetroot in a serving dish. Toss with vinegar and sugar. Season with salt and pepper.

    Tip

    This salad gets better if the beets get a chance to marinate for 30 minutes or so before serving.
