Tofu, cucumber and tomato salad

    A refreshing, light salad for any hot summer day! The kidney beans and tofu make it a great vegetarian main, as well. The basil may be substituted with fresh parsley or mint. Be sure to make this salad just before serving.

    Serves: 4 

    • 1 tomato, chopped
    • 1 cucumber, seeded and chopped
    • 1/2 red onion, thinly sliced
    • 1 (400g) tin kidney beans, drained
    • 100g (4 oz) firm tofu, diced
    • handful chopped fresh basil
    • 4 tablespoons salad dressing of choice
    • salt and freshly ground black pepper to taste

    1. In a large bowl, combine the tomato, cucumber, red onion, kidney beans, tofu and basil. Just before serving, toss with salad dressing, and season with salt and pepper.


    This is perfect with a simple balsamic vinaigrette.

    Used different ingredients. Excellent! Skipped the tofu because I don't like it, and added 1 tsp. minced garlic. Delicious!  -  24 Jul 2008
