About this recipe:This sauce is absolutely perfect with pasta, white fish or chicken. It's a tomato based sauce with garlic, onions, capers, kalamata olives and seasonings. Serve with crumbled feta or grated Parmesan.
1 small onion, diced
1 tablespoon olive oil
5 cloves garlic, finely chopped
1 (400g) tin chopped tomatoes with basil
1 tablespoon capers, chopped
15 kalamata olives, pitted and sliced
2 tablespoons balsamic vinegar
salt and pepper to taste
crushed chillies to taste
crumbled feta or grated Parmesan cheese

In a frying pan, cook onion in olive oil over medium high heat until tender and translucent. Stir in garlic and cook for 1 minute. Add tomatoes, passata, capers, olives, vinegar, salt, pepper and crushed chillies.
Reduce heat, cover and simmer for a minimum of 30 minutes or up to 2 hours, time permitting. Serve over pasta, fish or chicken and top with crumbled feta or grated Parmesan cheese. Enjoy!
