About this recipe:These biscotti are different from ordinary plain biscotti. They have anise seeds and walnuts in them and are flavoured with anise extract. Perfect when served with a cup of black coffee.
Makes: 5 dozen
225g unsalted butter
500g caster sugar
2 teaspoons vanilla extract
2 1/2 tablespoons baking powder
1kg plain flour
2 teaspoons anise extract
1 tablespoon anise seeds
115g walnuts, chopped
2 egg yolks

Preheat oven to 190 C / Gas 5.
In a large bowl, cream together butter and sugar. Gradually add the vanilla and eggs while mixing. Sieve together the flour and baking powder; stir into the egg mixture. For plain biscotti, do not add anything else. For anise biscotti, add the anise extract and anise seeds. Add walnuts if desired.
Roll dough out into 4 logs as long as your baking tray will allow. Press down each one to about 1.75cm in height and 7.5cm wide. Brush with egg yolks and bake for 15 minutes, until golden brown. Slice on a diagonal slant, slices should be about 1.75cm wide. Place slices back onto the baking tray and return to the oven for 10 more minutes, biscotti should be dry and lightly toasted.
