Baked Cheese and Ham Frittata

    A super-easy frittata recipe. Diced ham, Cheddar cheese, mozzarella cheese, eggs and milk are baked together to create this wonderful egg dish. Serve for breakfast, brunch, lunch or dinner.

    Makes: 4 - 6 servings

    • 8 eggs
    • 250ml milk
    • 1/2 teaspoon seasoning salt
    • 75g cooked ham, diced
    • 55g Cheddar cheese, grated
    • 55g mozzarella cheese, grated
    • 1 tablespoon dried onions, finely chopped

    1. Preheat oven to 180 C / Gas 4. Grease a 20x20cm or similar sized baking dish and set aside.
    2. Beat together the eggs and milk. Add seasoning salt, ham, Cheddar cheese, mozzarella cheese and onions. Pour into prepared dish.
    3. Bake uncovered at 180 C / Gas 4 for 40 to 45 minutes.

    It is an tasteful, quick, easy recipe. Looks great when served, stays better than a souffle. Only change I made was to increase the cheese and ham portions and added pepper and tomato cubes.  -  29 Jul 2011

    I love this recipe. I did change it some by using bacon instead of ham and parm. cheese instead of the moz. Omitted the onions and sprinkled extra chedder and chives on top just before it was done. Served it with chopped tomatoes on top. The basic recipe is wonderful because there are so many ways you can fix it. Next time I'm thinking asparagus and fresh mushrooms. Yum!
