About this recipe: A simple, yet delectable appetiser that will make your guests swoon. A mixture of tomatoes, basil, Parmesan, garlic, balsamic vinegar and olive oil is served with freshly toasted crostini.

Serves: 8 

  • 8 plum tomatoes, diced
  • 15g fresh basil, chopped
  • 4 tablespoons grated Parmesan cheese
  • 2 cloves garlic, finely chopped
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon olive oil
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 loaf French bread, sliced and toasted

  1. In a bowl, toss together the tomatoes, basil, Parmesan cheese and garlic. Mix in the balsamic vinegar, olive oil, salt and pepper. Serve on toasted bread slices.
