Delicious picnic eggs

    Mayonnaise and mustard are mixed with mashed egg yolks to fill each half of boiled eggs. Great staple for a buffet table or picnic.

    Serves: 8 

    • 8 eggs
    • 1/2 teaspoon mustard
    • 1 tablespoon mayonnaise
    • salt and pepper to taste
    • 1 pinch paprika

    1. Place eggs in saucepan and cover with water. Bring to boil. Cover, remove from heat, and let eggs sit in hot water for 10 to 12 minutes. Remove from hot water and cool.
    2. Peel eggs and cut in half lengthwise. Remove yolks and combine with mustard, mayonnaise, salt and pepper. Mix together until smooth.
    3. Refill each egg half with the yolk mixture and sprinkle with paprika.

    Took shortcuts. This is the classic recipe that I have always used and I'm asked to bring them to every family gathering. Here's a tip for making things much quicker, less messy and a little fancier: Mix until creamy. Put it all into a plastic food storage bag. Seal the top, snip a lower corner to make a hole and squeeze the filling into the egg halves.  -  24 Jul 2008


    Altered ingredient amounts. Made this recipe exactly as written but found the filling to be really dry and a tad bland. So, I doubled the mayonnaise and mustard and tried it that way. I would give this recipe as written 2 stars but when doctored, it rates 4-5. That's the nice thing about deviled eggs, you can keep tasting until you like it then stuff the white.  -  24 Jul 2008
