10 medium beetroot, scrubbed and chopped
165g onions, chopped
155g red peppers, chopped
1 stick celery, chopped
2 tablespoons salt
100g caster sugar
100g cauliflower, chopped
3 tablespoons mustard seeds
1 tablespoon celery seeds
250ml white vinegar

In a large pot, combine the beetroot, onion, red pepper, celery, sugar and cauliflower. Season with salt, mustard seeds and celery seeds, then stir in vinegar. Bring to the boil, then reduce heat to low. Simmer, stirring occasionally, until vegetables are tender, about 20 minutes.
