    About this recipe: A wonderful relish made with beetroot, onions, red peppers, celery, cauliflower and other seasonings. This relish goes amazingly well with lamb. Serve with whatever you fancy.

    Serves: 6 

    • 10 medium beetroot, scrubbed and chopped
    • 165g onions, chopped
    • 155g red peppers, chopped
    • 1 stick celery, chopped
    • 2 tablespoons salt
    • 100g caster sugar
    • 100g cauliflower, chopped
    • 3 tablespoons mustard seeds
    • 1 tablespoon celery seeds
    • 250ml white vinegar

    1. In a large pot, combine the beetroot, onion, red pepper, celery, sugar and cauliflower. Season with salt, mustard seeds and celery seeds, then stir in vinegar. Bring to the boil, then reduce heat to low. Simmer, stirring occasionally, until vegetables are tender, about 20 minutes.
