About this recipe: Delicata squash is boiled until tender, then mashed with honey, dark brown soft sugar, cinnamon and allspice. This sweet side dish goes particularly well with spicy food.


Makes: 4 

  • 2 medium delicata squash, halved and seeded
  • 2 tablespoons honey
  • 1 tablespoon dark brown soft sugar
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon allspice

  1. Place squash in a large saucepan with enough water to cover. Bring to the boil and cook 10 minutes or until tender. Drain and cool slightly. When cool enough, remove the skin.
  2. Transfer squash to a medium bowl. Mix in the honey, dark brown soft sugar, cinnamon and allspice. Mash together thoroughly and serve warm.


If delicata squash is unavailable, substitute in butternut squash.
