Simple bruschetta topping

    An excellent way to use tomatoes when they're in season. Tomatoes are marinated with parsley, chives, garlic, basil and olive oil. Serve on garlic-rubbed, toasted slices of French or Italian bread.

    Serves: 4 

    • 3 large tomatoes, seeded and chopped
    • 2 tablespoons chopped fresh parsley
    • 2 tablespoons chopped fresh chives
    • 2 cloves garlic, finely chopped
    • 4 tablespoons finely chopped fresh basil
    • 75ml extra virgin olive oil
    • salt and pepper to taste

    1. In a medium bowl, combine tomatoes, parsley, chives, garlic, basil, olive oil, salt and pepper. Cover and refrigerate for at least 1 hour, allowing flavours to meld before serving.
