Cheesy Bacon Sweetcorn and Potato Soup

About this recipe: This is a fantastic chowder recipe. Potatoes are simmered with bacon, onion, creamed style corn, evaporated milk, full fat milk and cheese. It makes the perfect meal for those cold winter months.


Serves: 12 

  • 1.35kg potatoes, peeled and diced
  • 115g streaky bacon, diced
  • 120g onion, chopped
  • 850g tinned creamed style corn
  • 350ml evaporated milk
  • 175ml full fat milk
  • 50g margarine
  • 225g processed cheese, such as Kraft singles, unwrapped and chopped
  • salt and pepper to taste

  1. Place potatoes in a large pot with water to just cover; bring to the boil, then reduce heat and simmer until just tender, 15 minutes.
  2. Meanwhile, cook bacon over medium heat in a large frying pan with onion until just crisp. Drain and set aside.
  3. When potatoes are just tender, stir bacon mixture, creamed style corn, evaporated milk, milk, margarine, cheese, salt and pepper into the pot. Heat, stirring, 10 minutes, until cheese and margarine are melted and mixture is thoroughly heated.
