    About this recipe: The perfect homemade condiment, which are excellent for food gifts. This relish will pep up any bland dish. Sweetcorn, cabbage, onion, peppers, apple cider vinegar and seasonings are simmered together.

    Serves: 128 

    • 1.2kg sweetcorn
    • 350g cabbage, chopped
    • 160g onion, chopped
    • 150g green pepper, chopped
    • 150g red pepper, chopped
    • 200g caster sugar
    • 2 tablespoons ground dry mustard
    • 1 tablespoon celery seeds
    • 1 tablespoon mustard seeds
    • 1 tablespoon salt
    • 1 tablespoon ground turmeric
    • 1 litre apple cider vinegar
    • 250ml water

    1. In a large saucepan, mix sweetcorn, cabbage, onion, green pepper, red pepper, caster sugar, ground dry mustard, celery seeds, mustard seeds, salt, turmeric, apple cider vinegar and water. Bring to the boil. Reduce heat and simmer 20 minutes.
    2. Transfer the mixture to sterile containers. Seal and chill in the refrigerator until serving.
