    About this recipe: A hearty soup, which will warm the cockles of your heart. Chicken is simmered with black beans, chickpeas, tomatoes, condensed soup and spices. Serve with crusty fresh bread or thick wedges of corn bread.

    Serves: 4 - 6

    • 950ml water
    • 3 cubes chicken stock
    • 1 onion, chopped
    • 1 mild chilli, seeded and diced
    • 1 (440g) tin hominy, drained
    • 1 (410g) tin black beans, rinsed and drained
    • 1 (410g) tin chickpeas, rinsed and drained
    • 1 (400g) tin chopped tomatoes with chilli, undrained
    • 1 (400g) tin chopped tomatoes, undrained
    • 2 (295g) tins cream of chicken condensed soup
    • 400g cooked chicken, cubed
    • 4 1/2 teaspoons garlic granules
    • 3 tablespoons lime juice
    • 5 dashes hot pepper sauce
    • 3 tablespoons dried coriander
    • 1 teaspoon chilli powder
    • 1 teaspoon ground cumin
    • salt and pepper to taste

    1. Bring the water to the boil in a large pot; stir the stock cubes into the water until dissolved. Add the onion, chilli, hominy, black beans, chickpeas, tomatoes, chicken soup, chicken, garlic granules, lime juice, hot pepper sauce, coriander, chilli powder, cumin, salt and pepper; stir. Reduce heat to medium and cook the soup until the onions are soft and opaque, about 20 minutes.
