Gorgonzola and Cream Cheese Ball
This is a wonderful spread to serve at an informal dinner party. Cream cheese is blended with Gorgonzola and white wine, then rolled in paprika and pistachio nuts and formed into a ball. Serve with crackers and crusty bread.

- 225g cream cheese, softened
- 60g Gorgonzola cheese, crumbled
- 4 tablespoons grated mature Cheddar cheese
- 2 tablespoons white wine
- 2 tablespoons paprika
- 60g pistachio nuts, chopped

- In a medium bowl, blend cream cheese, Gorgonzola cheese, mature Cheddar cheese and white wine. Form the mixture into a ball shape.
- On a piece of greaseproof paper, spread the paprika and pistachio nuts. Roll the cheese ball in paprika and pistachios to coat.
- Wrap coated cheese ball in greaseproof paper. Chill in the refrigerator 6 hours or overnight, before serving.

I thought this appetizer was simple and extremely tasty. I decided to double the gorgonzola (and leave out the cheddar and paprika)...I thought the level of blue cheese taste was just right (not overpowering). I served this with slices of toasted baguette, and with slices of pears (soaked in lemon juice to prevent browning). I was able to make everything hours in advance, and everyone loved it. This recipe was devoured at a recent Christmas party. It has been requested that I make this for every family get-together from now on.
