Moist Gingerbread

    A deliciously moist and spicy cake.The spices and treacle give this gingerbread a wonderful depth in flavour. Serve as a dessert, snack, elevenses or for afternoon tea.

    Serves: 16 

    • 100g caster sugar
    • 110g unsalted butter
    • 1 egg
    • 350g black treacle
    • 300g plain flour
    • 1 1/2 teaspoons bicarbonate of soda
    • 1/2 teaspoon salt
    • 1 teaspoon ground cinnamon
    • 1 teaspoon ground ginger
    • 1/2 teaspoon ground cloves
    • 250ml hot water

    Prep:15min  ›  Cook:1hr  ›  Extra time:2hr cooling  ›  Ready in:3hr15min 

    1. Preheat oven to 180 C / Gas 4. Greased and flour one 23cm square tin.
    2. Cream together the sugar and butter. Add egg and beat well. Mix in the black treacle.
    3. Sieve together the flour, bicarbonate of soda, salt, cinnamon, ginger and cloves. Add dry ingredients to the creamed mixture; add the hot water and mix well.
    4. Pour batter into tin and bake for one hour. Allow to cool in tin and serve.

    I made this cake the other week. Its one of the best cakes I have made really most as well just how I like them . The one thing that I did was add more ginger to it  -  03 Jun 2014
