About this recipe: A delicious soup that's also dead easy to make. Cooked broccoli is simmered in a thick and creamy milk base. Enjoy with crusty fresh bread for lunch or dinner.

Serves: 6 

  • 750ml water
  • 2 teaspoons salt
  • 100g chopped broccoli
  • 30g butter
  • 3 tablespoons plain flour
  • 1 (410g) tin evaporated milk
  • 250ml water
  • 1 1/2 teaspoons grated onion
  • 1 1/2 teaspoons salt

  1. In a medium saucepan, bring 750ml water and salt to the boil. Cook broccoli in boiling water, uncovered, for 10 to 12 minutes. Drain, place broccoli in a small bowl and mash.
  2. Melt butter in a large saucepan over medium heat. Mix in flour and then gradually whisk in milk and water; stir continuously until liquid begins to boil. Stir in grated onion and mashed broccoli. Season with remaining salt.
