    About this recipe: Anyone can make this quick and easy baked cod recipe. Full of flavour, but extremely low in fat and calories. Serve with rice.

    Ingredients
    Serves: 4 

    • 700g (1 1/2 lb) cod fillets
    • 450ml (16 fl oz) good quality tomato salsa, such as Discovery
    • handful chopped fresh parsley
    • salt and freshly ground black pepper to taste

    Method
    Prep:5min  ›  Cook:30min  ›  Ready in:35min 

    1. Preheat oven to 180 C / Gas mark 4.
    2. Place fillets in a lightly greased baking dish. Pour salsa over fish. Sprinkle with parsley, salt and pepper.
    3. Bake in preheated oven for 30 minutes. Serve warm over rice.

    Tip:

    For a more sustainable choice, use Pacific cod rather than Atlantic, or choose something more local - such as Dover sole.

    Alternatives to cod:

    Try this recipe with inexpensive fresh coley or pouting. They both belong to the cod family but are much cheaper and available in larger supermarkets or fishmongers.

    I used cod that was about 2,5cm thick. It cooked perfectly in 30 minutes. My husband and I both said it was delicious! Took 5 minutes to put together. - 15 Sep 2008
