    About this recipe: These beetroots are the perfect side dish to any meal. Beetroots are simmered in a mixture of sugar, cornflour, vinegar and water. Serve warm or chilled with whatever you fancy.

    Ingredients
    Serves: 6 

    • 150g caster sugar
    • 4 teaspoons cornflour
    • 75ml white vinegar
    • 75ml water
    • 500g vacuum packed beetroots, sliced
    • 50g butter
    • 1/4 teaspoon salt
    • 1/4 teaspoon pepper

    Method
    Prep:5min  ›  Cook:35min  ›  Ready in:40min 

    1. In a saucepan, combine the sugar, cornflour, vinegar and water. Bring to the boil and cook for 5 minutes.
    2. Add the beetroots to the liquid and simmer for 30 minutes over low heat. Stir in butter, salt and pepper and remove from the heat. Serve warm or chilled.

    I made this almost exactly as the recipe except I used fresh beetroot so simmered it a bit longer. It was a bit sweet for my liking so next time (yes, I'll make it again) I'll only use 100g sugar. It went really nicely with roast pork.  -  04 Oct 2016

    Outstanding! Family loved them, no leftovers! Bought some fresh beets today and came home and went to All Recipes for some ideas on what to do with them. Tried this recipe,cut back to 1/3 cup sugar and threw in some cloves and cinnamon as I remembered those flavors from my mother's beets.     I used this for fresh beets. Peel and cut 6 medium beets and steam in a steamer basket for 25 min. Reserve 2T of the red water and add to a 4 cup glass measure combine 1/4 C sugar, 2 tsp cornstarch, 2T cider vinegar and cook in microwave for 2 min. Whisk in 3T melted butter and cook in microwave 1 more minute. Add beets to 2.5 qt casserole and pour sauce on top. Good hot or cold.  -  10 Feb 2009  (Review from Allrecipes US | Canada)
