Baked Honey Mustard Chicken

    This chicken dish is not only delicious, but it's also low in fat and super-easy to make. Chicken is marinated in a honey-mustard sauce, then baked to perfection. It's delicious with rice, mashed potatoes or even pasta.

    Makes: 4 

    • 4 skinless, boneless chicken breast fillets
    • 4 tablespoons honey
    • 4 tablespoons Dijon mustard
    • 1 1/2 teaspoons curry powder
    • 1 tablespoon soy sauce

    1. Grease a baking dish and place the chicken breasts into the dish.
    2. Stir together the honey, Dijon mustard, curry powder and soy sauce in a bowl until thoroughly combined. Spoon the mixture over the chicken breasts. Cover the dish with foil and let marinate in refrigerator 6 hours or overnight.
    3. Preheat oven to 180 C / Gas 4.
    4. Bake the foil-covered dish in the preheated oven for 30 minutes, then uncover, turn the chicken breasts over and baste the chicken with sauce.
    5. Bake an additional 15 minutes, until the juices run clear and the chicken is no longer pink inside. An instant-read thermometer inserted into the centre should read at 74 degrees C.
