    About this recipe: A delicious sandwich that's jam-packed full of flavour. Ciabatta is filled with sauteed garlic, chillies, pepperoni, kale and mozzarella cheese. The perfect sandwich for any time of the day.

    Serves: 4 

    • 125ml extra-virgin olive oil
    • 5 cloves garlic, finely chopped
    • 1 teaspoon crushed chillies
    • 115g diced pepperoni
    • 2 bunches kale, central stem removed, chopped
    • salt, to taste
    • 4 ciabatta rolls, split
    • 8 slices mozzarella cheese

    1. Heat olive oil in a deep saucepan over medium heat. Stir garlic into the oil; cook and stir until softened but not browned, about 1 minute. Add the crushed chillies and pepperoni; cook and stir to blend flavours, about 1 additional minute.
    2. Stir in the kale, coating the leaves well with oil. Cover and cook until kale is fully wilted and soft, about 15 minutes. Season with salt.
    3. Place a piece of cheese on cut side of each roll; fill with the kale mixture. Serve warm.


    If you can get your hands on broccoli rabe (rapini), use this instead of kale.
