Cheese, leek and bacon dip

    This dip is awesome. Cream cheese is blended with cooked bacon, leeks and seasonings. Serve with crackers, crostini, chips or as a sandwich spread. This dip tastes best when allowed to sit for 24 hours.

    Serves: 24 

    • 450g streaky bacon
    • 15 leeks, trimmed and chopped
    • 700g cream cheese
    • 2 large cloves garlic
    • 2 1/2 tablespoons Worcestershire sauce
    • salt and pepper to taste

    1. Place bacon in a frying pan. Cook over medium high heat until evenly brown. Drain and crumble.
    2. In a food processor, blend the cooked bacon, leeks, cream cheese, garlic and Worcestershire sauce until smooth. Season with salt and pepper. Refrigerate until ready to serve.

    I used turkey bacon and reduced fat cream cheese. I think this makes a better spread than it does a dip, for us anyway. Next time, I think I'll try this with half reduced sour cream and then try it as a dip. NOTE: The longer it sits, the better it gets.  -  02 Sep 2012  (Review from Allrecipes US | Canada)


    My husband LOVED this. I made a couple changes. First, it was way too much for a first taste, so I did a 6th of the recipe, which was a very manageable amount - made about 1 cup or a little more. I also added some sour cream (maybe 1/2 cup?) to make it a little less thick. I did the bacon, but I don't think it changed the flavor all that much.
