Easy Bruschetta

    A super-easy and quick recipe for bruschetta. Sliced ciabatta is brushed with garlic oil, topped with tomato and Parmesan, then grilled to perfection. Serve as an appetiser or finger food.

    Serves: 4 

    • 4 slices ciabatta bread, 1.25cm thick
    • 120ml olive oil
    • 1 tablespoon garlic salt
    • 1 large tomato, sliced
    • 80g grated Parmesan cheese

    Prep:10min  ›  Cook:5min  ›  Ready in:15min 

    1. Preheat the grill.
    2. Arrange the slices of bread in a single layer on a baking tray. Mix together the olive oil and garlic granules in a cup or small bowl. Brush onto the slices of bread.
    3. Cover each piece of bread with tomato slices, then sprinkle with as much cheese as you like. Drizzle just a bit of the olive oil over the cheese.
    4. Grill for 3 to 5 minutes, until cheese is melted and bread is toasted. Make sure you keep an eye on it - it doesn't take long!

    Perhaps the reason some reviewers are finding this recipe to be a bit too salty , is because while the ingredients list says garlic salt, the directions say garlic powder. My guess is that it's supposed to be garlic powder. Better still, mince up a clove of the real thing !     This recipe was great. Very simple and quick. To save time, I used canned diced tomatoes, pre-seasoned with basil and garlic I didn't have any garlic salt on hand, so I used a Italian seasoning.
