About this recipe: This is a wonderful side dish that goes well with any meal. Leeks are layered with tomatoes and mozzarella, before being topped with seasoned cracker crumbs and baked.


Serves: 10 

  • 110g crushed buttery round crackers, such as Ritz®
  • 1/4 teaspoon dried rosemary
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon dried sage
  • 8 leeks, sliced
  • 900g tomatoes, sliced
  • 55g grated mozzarella cheese
  • 50g butter, melted

Prep:20min  ›  Cook:30min  ›  Ready in:50min 

  1. Preheat oven to 180 C / Gas 4.
  2. In a small bowl, mix crushed crackers, rosemary, thyme and sage.
  3. Place leeks in the bottom of a large baking dish. Layer with tomatoes and mozzarella cheese. Top with the crushed cracker mixture and drizzle with melted butter
  4. Bake 30 minutes in the preheated oven or until golden brown.

I wasn't expecting much from this except from your regular run of the mill veg, but baked. I used this because I had some leeks to use up, but WOW! This was yum! I had it inside a wholemeal pitta bread with some ham and it was delish! The leeks cook in the milk that comes out of the mozzarella and it was all so sweet and yummy! A great lunch for a dieter craving a bit of cheese! Im definately having this again! Thank you for the recipe! - 10 Mar 2011
