Lemon and poppy seed dressing

    This salad dressing has the perfect combination of flavours. It's sweet and tangy and goes well with any leafy salad. Apple cider vinegar is whisked with lemon juice, mustard, honey, oil and poppy seeds.

    Ingredients
    Makes: 4 

    • 3 tablespoons apple cider vinegar
    • 2 tablespoons fresh lemon juice
    • 2 teaspoons Dijon mustard
    • 2 teaspoons honey
    • 1/2 teaspoon onion powder
    • 1/4 teaspoon sea salt
    • 125ml grapeseed oil
    • 2 tablespoons poppy seeds

    1. Whisk together vinegar, lemon juice, mustard, honey, onion powder and salt in a bowl. Slowly drizzle in grapeseed oil, whisking constantly, until combined. Stir the poppy seeds into the mixture.

    Wow, just made this and it was really great! I doubled the amount of fresh lemon juice and added a bit more onion powder and honey and the end result was just fabulous. I also substituted extra virgin olive oil as I had no grape seed oil on hand. I served the dressing on a Greek salad made of spinach, chopped orange bell peppers, kirby cukes, red onion, feta, kalamata olives and tomatos from our garden. The dressing has a great fresh and balanced taste with a bright, sweet and flavorful balance.     this is excellent!!! i luv poppyseed anything...the only thing i did different was to use white wine vinegar instead of apple cider vinegar...thank u christine for the great recipe...i highly recommend it and will make it again...(oh i used it on a coleslaw medley) thanks again  -  01 Nov 2010  (Review from Allrecipes US | Canada)
