Prawns in a White Wine and Lemon Sauce

    A wonderful meal to have any day of the week. Prawns are simmered in a delicious white wine and lemon sauce, then served over freshly cooked brown rice.

    Serves: 4 

    • 190g brown rice
    • 400ml water
    • 50g butter
    • 3 tablespoons olive oil
    • 2 cloves garlic, finely chopped
    • 125ml white wine
    • 2 tablespoons fresh lemon juice
    • 675g medium prawns, peeled and deveined
    • 4 tablespoons chopped fresh flat-leaf parsley
    • 1/2 teaspoon cornflour

    1. Combine the brown rice and water in a small saucepan. Bring to the boil, reduce heat to low and cook until all the water is absorbed, about 25 minutes.
    2. Melt the butter with the olive oil in a frying pan over medium heat; cook the garlic in the butter and oil until fragrant, 1 to 2 minutes.
    3. Pour in the wine and lemon juice; reduce heat to medium-low and simmer. Stir in the prawns and cook until the prawns turn pink, stirring regularly, 5 to 7 minutes.
    4. Sprinkle the parsley over the prawns and cook another 2 minutes. Add the cornflour to the liquid and stir until it thickens, about 1 minute more. Serve hot over the brown rice.
