Lentil and Pasta Soup Mix in a Jar

    This soup mix is the perfect food gift for any occasion. All of the soup mix ingredients are prettily layered in a large jar, tagged with instructions and ready to be given to its grateful recipient.

    Serves: 12 

    • 40g beef stock granules
    • 4 tablespoons dried onion
    • 100g dried split peas
    • 30g uncooked small shaped pasta
    • 4 tablespoons pearl barley
    • 100g dry lentils
    • 60g long-grain white rice
    • 55g uncooked tricolour pasta

    1. Use a funnel that has about a 5cm neck. This will make it easier to fill the jar with the ingredients. Be sure to use a wide-mouth, 1 litre preserving jar.
    2. Layer ingredients in the order given: stock, onion, split peas, small shaped pasta, barley, lentils, rice and enough tricolour pasta to fill jar.
    3. Attach tag with cooking instructions: In large saucepan, brown 450g minced beef in a little olive oil. Remove tricolour pasta from top of jar and reserve. Add the rest of the jar contents to the saucepan with 1.5 litres water. Bring to the boil and simmer 45 minutes. Add tricolour pasta and simmer 15 minutes more. Serve with your favourite bread or rolls and a tossed salad.

    I made 12 of these for teacher gifts at Thanksgiving time. They are truly beautiful and are very much appreciated by those that receive them...one teacher's husband loved the soup so much I forwarded the recipe to her. My suggestion is to purchase ingredients in bulk at a BJ's or Sam's warehouse. I found the boullion and onion flakes to be very reasonably priced and I didn't have to make several trips to the grocery store. Also, I've found that Mason jars are "seasonal" items and you may not find them in the dead of winter...I located them at a 'grain & feed' store which stocks them year 'round.  -  05 Dec 2000  (Review from Allrecipes US | Canada)
