Orzo, spinach and feta lamb salad

    The perfect pasta salad with a Mediterranean twist. Orzo is tossed with minced lamb, spinach, tomatoes, spring onions and fresh herbs. Enjoy this salad all year long.

    Ingredients
    Serves: 6 

    • 200g uncooked orzo pasta
    • 2 tablespoons extra virgin olive oil, divided
    • 450g minced lamb
    • 2 cloves garlic, chopped
    • 1 tablespoon ground coriander
    • salt and pepper to taste
    • 125g fresh spinach leaves, chopped
    • 3 tomatoes, seeded and chopped
    • 1 lemon, zested and juiced
    • 4 tablespoons chopped fresh mint leaves
    • 4 tablespoons chopped fresh parsley
    • 5 spring onions, chopped
    • 250g crumbled feta cheese

    Method
    Prep:15min  ›  Cook:20min  ›  Ready in:35min 

    1. Bring a pot of lightly salted water to the boil. Add orzo pasta, cook for 5 minutes or until al dente. Drain.
    2. Heat 1 tablespoon olive oil in a frying pan over medium heat. Place the lamb and garlic in the frying pan. Season lamb with coriander, salt and pepper. Cook until evenly browned. Remove from heat and drain.
    3. In a large bowl, mix the spinach, tomatoes, lemon juice, zest, mint, parsley, spring onions and remaining olive oil. Toss with the orzo, lamb and feta cheese to serve.

    Tried this dish for the first time today, it was absolutely delicious. The blend of Lamb, lemon, mint, coriander and parsley made for a fantastic dish, one of my favourites. I would recommend this dish for anyone wanting to try something with a Mediterranean / Greek flavour.  -  18 May 2011

    YUM. I made this with sauted spiced chicken breast instead of lamb, left out the olive oil and the mint (store was out of it) and used a low fat sun dried tomato feta. Very good and very filling.
