About this recipe: This bread is not only quick and easy to make, it's also bursting with flavour. It's delicious for breakfast, brunch, lunch or dinner. Alternatively, you can enjoy it alongside a bowl of soup or stew.

Serves: 12 

  • 125g plain flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon garlic granules
  • 50g butter, softened
  • 3 eggs, beaten
  • 4 tablespoons finely chopped onion
  • 4 tablespoons diced green pepper
  • 4 tablespoons diced red pepper
  • 115g grated mature Cheddar cheese
  • 100g mushrooms, chopped

  1. Preheat an oven to 190 C / Gas 5. Grease a 23x13cm loaf tin.
  2. Combine flour, baking powder, salt and garlic granules together in a small bowl. Set aside. Whisk together butter and eggs until well combined, then stir in the flour mixture. Fold in the onion, green pepper, red pepper, Cheddar cheese and mushrooms. Mix well, the batter will be stiff. Pour batter into the prepared loaf tin.
  3. Bake in the preheated oven until a skewer inserted into the centre comes out clean, 50 minutes to 1 hour. Cool in the tin for 10 minutes before removing to cool completely on a wire rack.
