Pear and Pecan Bread

    This is a wonderfully moist bread. The loaf is studded with spices, fresh pears and pecans. It's the perfect bread to be enjoyed for brunch, dessert, afternoon tea or elevenses.

    Makes: 2 loaves

    • 250ml vegetable oil
    • 400g granulated sugar
    • 3 eggs
    • 410g pears, peeled, cored and chopped
    • 110g chopped pecans
    • 2 teaspoons vanilla extract
    • 375g plain flour
    • 1 teaspoon bicarbonate of soda
    • 1 teaspoon baking powder
    • 1 teaspoon salt
    • 1 teaspoon ground cinnamon
    • 1/2 teaspoon ground nutmeg

    1. Preheat oven to 180 C / Gas 4. Lightly grease two 20x10cm loaf tins.
    2. In large mixing bowl combine oil, sugar and eggs, beat well. Stir in pears, pecans and vanilla. In another bowl, combine flour, bicarbonate of soda, baking powder, salt, cinnamon and nutmeg. Stir dry ingredients into the pear mixture; mix well. Pour batter into prepared loaf tins
    3. Bake in preheated oven for 60 minutes, until a skewer inserted into centre of a loaf comes out clean. Allow loaves to cool in tins for 10 minutes before moving to a wire rack to cool completely.
