Preheat oven to 180 C / Gas 4. Lightly grease two 20x10cm loaf tins.
In large mixing bowl combine oil, sugar and eggs, beat well. Stir in pears, pecans and vanilla. In another bowl, combine flour, bicarbonate of soda, baking powder, salt, cinnamon and nutmeg. Stir dry ingredients into the pear mixture; mix well. Pour batter into prepared loaf tins
Bake in preheated oven for 60 minutes, until a skewer inserted into centre of a loaf comes out clean. Allow loaves to cool in tins for 10 minutes before moving to a wire rack to cool completely.
Makes a fantastic breakfast for when I'm in a rush. I only had 1 loaf tin so just poured it all in that and cooked for an hour and a half, was fantastic yum. Next time might add more pecans. - 21 Sep 2011
This cake was awesome, I made it yesterday and we've nearly finished the first loaf already. The sponge is so light and soft - it's the first time anything less than leaden has come out of my loaf tins! - 12 Nov 2010
