    About this recipe: This is an Italian recipe for a super-rich tomato sauce. Onions, peppers, tomatoes and seasonings are simmered together for no less than 4 hours. Serve with pasta.

    Serves: 96 

    • 1.8kg onions
    • 6 green peppers
    • 1 1/2 cloves garlic
    • 4 (400g) tins whole peeled plum tomatoes
    • 4 (400g) tins chopped tomatoes
    • 1.7kg tomato puree
    • 450g passata
    • 120ml vegetable oil
    • 2 tablespoons Italian herb seasoning

    1. Grind onion, pepper and garlic in meat grinder. In a large saucepan combine ground vegetables, whole tomatoes, diced tomatoes, tomato puree, passata, vegetable oil and Italian herb seasoning. Bring to the boil; reduce heat to simmer for 4 to 5 hours. Stir occasionally.
