Prosciutto Wrapped Pesto Chicken

    This is a quick and easy way to prepare a delightful chicken dish. Pesto is spread on chicken breasts, then wrapped in prosciutto and baked to perfection. Serve with pasta, a side salad or mashed potatoes.

    Serves: 4 

    • 4 skinless, boneless chicken breast fillets
    • 115g basil pesto, divided
    • 4 thin slices prosciutto or more if needed

    Prep:10min  ›  Cook:25min  ›  Ready in:35min 

    1. Preheat oven to 200 C / Gas 6. Grease a baking dish.
    2. Spread about 2 tablespoons of pesto per chicken breast over the top of each breast and wrap each breast in prosciutto slices to cover the entire breast. Place the wrapped chicken breasts into the prepared baking dish.
    3. Bake in the preheated oven until the chicken is no longer pink, the juices run clear and the prosciutto is lightly crisped, about 25 minutes.

    I slit the chcken and put the pesto and used bacon as a wrap which worked perfectly well - very tasty - impresses the guests  -  06 Jul 2014


    This recipe was fantastic! So easy too. I marinated chicken for a few hours in a citrus, onion, mustard seed marinade and used bacon instead of prosciutto.
