    About this recipe: This is a simple, yet hearty soup. Potatoes are simmered with sweetcorn, bacon and cheese. It's delicious when served with fresh bread. Enjoy for lunch or dinner.

    Serves: 8 

    • 12 potatoes, peeled and chopped
    • 1 onion, chopped
    • 225g streaky bacon, cut into small pieces
    • 600ml milk
    • 1 1/4 (340g) tin sweetcorn
    • 70g instant mash
    • 225g grated mature Cheddar cheese
    • 30g butter
    • salt and pepper to taste

    1. In a 3 litre saucepan, combine potatoes, onion, bacon and enough water to cover ingredients. Place lid on pot and cook until potatoes are tender. Stir occasionally to prevent sticking.
    2. Stir in milk and butter. Stir in instant mash to the thickness you desire. Add cheese and stir until it melts. Mix in sweetcorn. Season with salt and pepper to taste. Simmer over low heat for 10 to 20 minutes and serve.
