    About this recipe: This soup is quick and easy to make and tastes fantastic. It's perfect for the hot summer months. Tomato and clam juice is mixed with cooked prawns, avocados, cucumber, tomatoes, onion, coriander and lemon juice. Serve with crusty bread.

    Serves: 12 

    • 1.8 litres tomato and clam juice, such as Clamato
    • 1.35kg cooked prawns
    • 4 avocados, peeled and chopped
    • 2 cucumbers, cubed
    • 3 large tomatoes, diced
    • 1 red onion, diced
    • 1 bunch coriander, chopped
    • 2 tablespoons lemon juice
    • 1/2 teaspoon salt
    • 1/4 teaspoon pepper

    1. In a large bowl, combine the tomato and clam juice, prawns, avocados, cucumbers, tomatoes, red onion, coriander, lemon juice, salt and pepper.
    2. Refrigerate until ready to serve.
