About this recipe: This pie is quick and easy to make and tastes fab. A creamy, spiced pumpkin and Angel Delight mix is used to fill a digestive biscuit base. It's perfect when served with a dollop of whipped cream.

Serves: 6 - 8

  • 85g instant vanilla dessert mix, such as Angel Delight
  • 350ml skimmed milk
  • 250g pumpkin puree
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon ground ginger
  • 1/8 teaspoon ground allspice or ground cloves
  • 200ml double cream, whipped
  • 1 (23cm) prepared digestive biscuit base

Prep:15min  ›  Extra time:2hr chilling  ›  Ready in:2hr15min 

  1. In a mixing bowl, beat the dessert mix and milk until well blended. Blend in the pumpkin puree, spices and fold in whipped cream.
  2. Spoon into biscuit base and chill. Garnish with whipped cream and ginger, if desired.
