    About this recipe: A simple and delicious milkshake, which is perfect for pumpkin lovers. Pureed pumpkin is frozen, then blended with milk, brown sugar and cinnamon. Enjoy as a drink, dessert or snack.

    Ingredients
    Serves: 4 

    • 450g pumpkin puree
    • 475ml milk
    • 4 tablespoons dark brown soft sugar
    • 2 teaspoons ground cinnamon

    Method
    Prep:5min  ›  Extra time:1day freezing  ›  Ready in:1day5min 

    1. Place the pumpkin puree in a freezer bag; store in freezer for at least 24 hours.
    2. Heat the bag of pumpkin puree in the microwave on HIGH to soften, 1 to 2 minutes.
    3. Pour the milk into a liquidiser. Add the dark brown soft sugar, cinnamon and pumpkin puree; blend until smooth.

    Yum! I really enjoyed this smoothie. I pared it down to one serving for breakfast, using 1/2 cup of fresh pureed pumpkin (skipped freezing and used it at room temp), 1/2 tsp pumpkin pie spice, 1 scoop vanilla protein powder, 4 ice cubes, 1 tsp Stevia and 1 cup nonfat milk.     Yummy! I love anything with pumpkin. I freeze the pumpkin puree in ice cube trays, and then put the frozen pumpkin cubes in freezer bags. Makes it really easy for just 1 or 2 servings. When I want a smoothie I just toss in a few cubes, and add the rest of the ingredients to the taste and consistency I like.  -  03 Apr 2011  (Review from Allrecipes US | Canada)
