About this recipe:I usually use ripe peaches and lightly sugared berries, but any variation will work! Serve warm with ice cream, custard or whipped cream.
2 medium peaches - stones removed and sliced
1 apple - peeled, cored and sliced
1 pear - peeled, cored and sliced
75g (3 oz) blueberries
75g (3 oz) cherries - stones removed and sliced
2 small plums - stones removed and sliced
150g (5 oz) caster sugar
4 tablespoons semi skimmed milk
100g (4 oz) plain flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon vanilla extract
30g (1 oz) butter, melted

Preheat oven to 180 C / Gas mark 4. Grease a 2 litre baking dish.
Arrange the peaches, apple, pear, blueberries, cherries and plums in the prepared baking dish. In a medium bowl, beat egg, sugar and milk. In a separate bowl, sift together flour, baking powder and salt; stir into the egg mixture. Stir in vanilla and melted butter. Cover the fruit with the batter.
Bake 30 minutes in the preheated oven. Cobbler should be bubbly and lightly browned. Serve warm.
OMG! This is so simple and so nice! How have i never thought of this before! I used all frozen fresh fruit and it made no difference, it made its own sauce like a coulis.
I only used 100g sugar because im counting the calories (FYI theres only 212kcals in one serving!!!) and i just used twice as much pears because i had no apples. Thanks for this, I'm gona use this recipe a hundred more times! - 31 Mar 2011

Altered ingredient amounts.
Has become a favourite pudding around the house. I serve it warm, right out of the oven, with ice cream. Very easy to make, and everyone loves it. I use less sugar than what the recipe asks for 'cause I add some dark brown sugar and cinnamon to the apples to give them more flavour. - 21 Jul 2008
