Apple and Pumpkin Salad

    A simple and refreshing salad, which is also quick and easy to make. Grated apples are tossed with grated pumpkin, plump raisins and lemon juice. Serve as a light starter or alongside any summer bbq.

    Ingredients
    Serves: 2 

    • 3 tablespoons raisins
    • 2 tart apples, peeled and grated
    • 75g grated pumpkin
    • 2 teaspoons lemon juice
    • salt and pepper to taste

    Method

    1. Place the raisins in a small dish and cover with hot water. Allow to stand for 30 minutes.
    2. Once the raisins are plump, drain and place into a mixing bowl with the apple and pumpkin. Pour in the lemon juice and toss to coat. Season to taste with salt and pepper and serve immediately.
