    About this recipe: A marinade that's perfect for chicken, guaranteed to please every time.

    Ingredients
    Serves: 5 

    • 225ml (8 fl oz) olive oil
    • 8 tablespoons soy sauce
    • 4 lemons, juiced
    • 4 tablespoons mustard
    • small handful minced fresh chives
    • small handful minced fresh sage
    • handful minced fresh oregano
    • handful chopped fresh parsley
    • small handful minced fresh thyme
    • 4 cloves garlic, minced
    • 1 tablespoon paprika

    Method

    1. In a small bowl, whisk together the olive oil, soy sauce, lemon juice and mustard. Stir in remaining ingredients.
    2. Cover, and refrigerate for 30 minutes to allow flavours to blend before using it to marinate meat, poultry or fish.

    I used this marinade over the weekend when I had a BBQ and it went down a storm! All of my guests thought that it was gorgeous. The sharpness from the lemon cut delicately through the herbs and worked well with the paprika. I omitted the chives as I didn't have any to hand but I don't think I'll bother putting them in next time as I thought it went well just as it was. In fact I'm going to have it tonight with some couscous! - 11 Aug 2009
