    About this recipe: This is a wonderful salad that will bring a ray of sunshine to your dining table. It has the perfect combination of sweet, savoury and tang. Salad leaves are tossed with mango, watermelon, mint, feta cheese and red onion in a balsamic-olive oil dressing. It's perfect for a summer picnic or bbq.

    Serves: 4 

    • 225g mixed baby leaf salad
    • 75g diced mango
    • 75g cubed seeded watermelon
    • 1 tablespoon chopped fresh mint
    • 4 tablespoons crumbled feta cheese
    • 2 tablespoons finely chopped red onion
    • 1 tablespoon white balsamic vinegar
    • 1 tablespoon olive oil
    • 1 tablespoon mango juice

    1. Combine the salad greens, mango, watermelon, mint, feta cheese and onion in a mixing bowl. Whisk the vinegar, olive oil and mango juice together in a small bowl and pour over the salad. Toss gently to evenly coat.

    What a fabulous salad!!! Really colourful and full of flavour! Would make a nice starter, but I had mine for lunch. I used OJ and regular balsamic for the dressing - still delish. Highly recommended! - 24 Jun 2011
