225g mixed baby leaf salad
75g diced mango
75g cubed seeded watermelon
1 tablespoon chopped fresh mint
4 tablespoons crumbled feta cheese
2 tablespoons finely chopped red onion
1 tablespoon white balsamic vinegar
1 tablespoon olive oil
1 tablespoon mango juice

Combine the salad greens, mango, watermelon, mint, feta cheese and onion in a mixing bowl. Whisk the vinegar, olive oil and mango juice together in a small bowl and pour over the salad. Toss gently to evenly coat.
What a fabulous salad!!! Really colourful and full of flavour! Would make a nice starter, but I had mine for lunch. I used OJ and regular balsamic for the dressing - still delish. Highly recommended! - 24 Jun 2011
