Easy Kale and Potato Soup

    This hearty soup is easy to make and tastes fantastic. Turkey ham is simmered with kale and potatoes in a chicken stock. Enjoy on the cold winter nights.

    Serves: 8 

    • 2 litres chicken stock
    • 1 bunch kale, rinsed and sliced
    • 675g potatoes, cut into chunks
    • 450g cooked turkey ham, diced
    • 4 cloves garlic, chopped
    • freshly ground black pepper to taste

    1. Measure the chicken stock into a large pot. Bring to the boil over medium heat. When it comes to a boil, add the kale, potatoes, ham and garlic. Season with ground black pepper. Simmer covered over low heat for 1 1/2 hours.

    This gets points for ease and high nutrition. Use the prewashed, precut kale in a bag for added ease. I used regular ham. Even some of the kids ate this. The flavor is simple, but perfect.     We also had kale from our CSA and didn't want it to go to waste. This is a GREAT recipe and the first time we've had kale, what a wonderful soup. Per the other comments I added onions, garlic (before boiling the broth) and tabasco. So easy!
