Simple baked squash

    This is a simple and delicious way to prepare winter squash. Chopped delicata squash is baked with butter, sugar and salt. Enjoy as a side dish to any meal. It goes particularly well with roasted meats.

    Serves: 2 

    • 1 delicata squash
    • 2 tablespoons dark brown soft sugar
    • 50g butter
    • 1/4 teaspoon salt

    Prep:20min  ›  Cook:35min  ›  Ready in:55min 

    1. Preheat oven to 190 C / Gas 5.
    2. Peel and cut the squash into 5cm pieces. Place the pieces into a loaf tin or other deep and narrow baking tin. Sprinkle the dark brown soft sugar and salt over the pieces and drop the butter on top. Cover the tin with foil.
    3. Bake at 190 C / Gas 5 for 35 minutes. Serve hot and enjoy!


    If you can't get your hands on delicata squash, use butternut squash or sweet potatoes instead.

    The dish was simple, quick to prepare and delicious (to those who complained that squash was too hard to cut I'd recommend investing in a good knife - makes life a lot easier)! I added a little cinnamon to it, and it was great. The only thing: there was way too much butter in the recipe! I'll add half of the recommended amount next time.     Yet another example of "how to make an inherently healthy veggie really, really bad for you..", but freakin' GOOD! BF loved it, made it using only half a squash (maybe mine was really big, as it filled up a whole bread pan?) but everything e3lse the same and the results were excelllent!!!     Great Recipe! We cut our squash into smaller pieces, about 1 inch, which made it cook faster. Also added a little more brown sugar. This is a great alternative to eating the squash mushed, the taste and texture of the squash really comes through, and it's just sweet enough to be everyone's (especially the kiddo's) favorite!  -  23 Feb 2005  (Review from Allrecipes US | Canada)
