10 minute microwave risotto

    This is a delicious risotto style dish that is quick and easy to prepare in the microwave. You can bulk it up with leftover roast meat and/or roasted peppers, if you like.

    Serves: 4 

    • 450g short grain white rice
    • 200ml chicken stock
    • 50g strong cheddar, grated
    • finely chopped fresh parsley

    Prep:5min  ›  Cook:5min  ›  Ready in:10min 

    1. Pour the stock over the rice and cook in a microwave safe bowl for 5 -10 minutes, or until the rice is cooked to your liking. Check after 5 minutes.
    2. When cooked, stir in the grated cheese and parsley; serve piping hot.

    I used aborio rice and halved the recipe as I only wanted a small amount, it was still hard and dried out after 5mins cooking, so I added more stock and cooked again for another 5mins, still hard and uncooked, so added further stock to cover, covered the bowl with gladwrap and cooked again for another 5mins, finally cooked! Added the cheese which made it creamier and the end result was good, I will definitely do again as it's good for a quick lunch to take to work, but I will change the cooking method and cover the bowl, and add more stock.  -  16 Mar 2011  (Review from Allrecipes AU | NZ)
