    About this recipe: This is a delicious risotto style dish that is quick and easy to prepare in the microwave. You can bulk it up with leftover roast meat and/or roasted peppers, if you like.

    Serves: 4 

    • 450g short grain white rice
    • 200ml chicken stock
    • 50g strong cheddar, grated
    • finely chopped fresh parsley

    Prep:5min  ›  Cook:5min  ›  Ready in:10min 

    1. Pour the stock over the rice and cook in a microwave safe bowl for 5 -10 minutes, or until the rice is cooked to your liking. Check after 5 minutes.
    2. When cooked, stir in the grated cheese and parsley; serve piping hot.
