Veggie Bagel Sandwich

    This is a quick and easy sandwich, which is perfect for packed lunches. A bagel is spread with a seasoned cream cheese, then topped with radishes, rocket leaves and sliced tomatoes.

    Serves: 1 

    • 4 tablespoons cream cheese
    • 1/4 teaspoon fresh lime juice
    • 1/4 teaspoon balsamic vinaigrette
    • salt and ground black pepper to taste
    • 1 bagel, sliced in half
    • 3 radishes, thinly sliced
    • 4 tablespoons rocket leaves
    • 3 slices tomato

    1. Mix the cream cheese, lime juice, balsamic vinaigrette, salt and pepper in a bowl. Spread the mixture evenly over one of the bagel halves. Arrange the radish slices, rocket and tomato on top of the cream cheese. Sandwich with the remaining bagel half.

    My daughter asked for these for her lunchbox, which means it's a winner! We grow our own radishes and arugula, and will have our own tomatoes later this Summer, so this is a perfect way to use our garden for a quick and healthy meal. We prefer the thin bagels over regular, and pictured is a whole wheat version. The cream cheese mixture has a subtle but savory flavor, and combined with the spiciness of the radishes and arugula, it's a definite treat. I'll make these often when my garden grows!
