About this recipe:This is a fantastic autumn dish. Butternut squash is baked with apples, butter, light brown soft sugar and seasonings. Enjoy as a side dish. It goes well with roasted meats.
110g packed light brown soft sugar
50g unsalted butter, melted
1 tablespoon plain flour
1 teaspoon salt
1/2 teaspoon ground mace
900g butternut squash, peeled, seeded and cut into 1.25cm slices
2 large apples, cored and cut into 1.25cm slices

Preheat oven to 180 C / Gas 4.
In a medium bowl, stir together light brown soft sugar, butter, flour, salt and mace. Arrange squash in an ungreased 23x33cm or similar sized baking dish. Top with slices of apple, then sprinkle with the sugar mixture. Cover with a lid or foil.
Bake for 50 to 60 minutes in the preheated oven or until squash is tender.
