Baked acorn squash with stuffing

    This is a simple and satisfying side dish. Acorn squash halves are stuffed with butter, sugar and stuffing mix. It goes particularly well with roast chicken or turkey.

    Makes: 2 - 4 servings

    • 1 acorn squash, halved and seeded
    • 60g butter, divided
    • 4 tablespoons dark brown soft sugar, divided
    • 400g dry bread stuffing mix, divided
    • 350ml chicken stock, divided
    • salt and pepper to taste
    • garlic granules to taste
    • onion powder to taste

    1. Preheat oven to 200 C / Gas 6.
    2. Place squash, face up, in a shallow baking dish. In each half place half the butter, half the dark brown soft sugar, half the stuffing mix, half the chicken stock, salt, pepper, garlic granules and onion powder. Wrap each half tightly with foil.
    3. Bake in preheated oven for 60 minutes or until squash is very tender.


    If acorn squash is unavailable, use butternut squash instead.

    I used a butternut squash instead of the acorn squash but otherwise I kept to the recipe and we loved it. It was very quick and easy to make. It tasted delicious with a mild spicy flavour. We added Feta cheese on the top once it was cooked and this was a good addition. Next time I would roast the seeds from the squash to add on the top for an extra crunch.     Very yummy recipe - even my picky husband liked it! I did make some changes, though. I eliminated the butter and brown sugar altogether, and I mixed the stuffing ingredients in a separate bowl before adding them to the squash. For extra savory flavor, I added a little bit of feta cheese. I took the foil off about halfway through the baking.
